YOUNES’S MINT TEA

Younes et Saïda servent le thé riaddartaliwint marrakech

Younes, our assistant at DAR TALIWINT’S is a purist when it comes to preparing a Moroccan mint tea “ATAY” in the traditional way.

Here is his ritual for a delicious mint tea for 4 people:

. Boil the water

. Clean your Moroccan metal teapot.

. Pour one heaped teaspoon loose  gunpowder tea and almost one glass of boiled water.

. Swirl the teapot a couple of times.

. Let the tea simmer for a minute and pour out the water back in the glass. Set it aside. Don’t discard it.

. Repeat the process in another glass. This time, discard it.

. Now, insert the fresh mint leafy branches (be generous), sugar  (two or three sugar bars, equivalent to about ten standard sugar cubes). Moroccan mint tea must be sweet to have richer aromas.

. Add the first glass of water you set aside earlier.

. Fill the teapot with the remaining boiled water and let gently simmer over medium-low heat until it comes to a boil.

. Pour the tea into the glass and repeat several times to mix with sugar (do not stir with a spoon, sacrilege!).

It’s ready

The tea will be skilfully poured from above, allowing it to become oxygenated so as to to create the foam and reveal all its aromas.
